The first history of the more than 230 feminist and lesbian-feminist restaurants, cafes and coffeehouses in the United States from 1972 to the present, published on the fiftieth anniversary of New York’s Mother Courage. Ketchum shows how these businesses served the women’s liberation, LGBTQ and food justice movements and trained women workers and entrepreneurs at a time when unmarried women struggled even to get a bank loan. The book compares cooperative, for-profit and non-profit models and examines financing, labour, pay, food sourcing and cultural programming, drawing on archives, interviews, photographs, menus, posters and calendars.
